lunchbox hero.

i am always on the hunt for new, easy recipes to keep in my back mom-jegging pocket for those days where i have a very hungry toddler and an even more limited window of time before the hunger meltdown begins. and might i add, the shorter the meal prep time, the longer the play time. we likey. 

today was no ordinary sunday friends. the meal: lunch. enter the ingredients: whole grain pillsbury crescents, natural-choices honey ham, organic cheese, some baby spinach chopped up. i rolled the ham, cheese, and spinach into the crescent rolls and baked at 375 for 12 minutes. et voila:


are you kidding me? a total of 15 minutes to make these badboys. and my biggest critic?


loved it. rarely does he approach any meal with this much determination. he ate THREE of my little masterpieces. THREE. this from a kid whose diet would only consist of mini gluten-free waffles and 'nanas' if it were up to him.

but today? today i felt like a lunchbox hero. one small step forward for my son's well-balanced diet. and one belly-poking 'wahoo' from a pillsbury-loving soccer mom.
