woo hoo.

as in, that fat little pillsbury dude.
woohoo.

i am moderately gluten-free. and by moderately, i mean i don't eat bread [except for a quarterly cheeseburger and bun], rice [never], pasta [only on my birthday or gluten free corn pasta] or anything that would be your standard gluten goodness.

my bod just doesn't agree with it.

or, my bod just didn't agree with it.

until i was on kraftcanada.com and saw all these delish recipes using multigrain pillsbury croissant dough. then i fell off the gluten-free wagon. at least compared to the past 5 years of my life.

things i know about my toddler:
he loves bread.
he loves food that is small and fits into tiny toddler hands.
he loves to do everything 'by myself.'
if you can hide it, he will eat it.

so those whole grain woohoo fat little dough boy croissant rolls? we eat them like, every other weekend. which, in retrospect isn't THAT bad for a fam who doesn't touch the bread stuff otherwise. plus i add lots of nice kale or another choice veg on the side:

here are a few of my fave 20 minute recipes:

always preheat the oven to 375. that's always step one.
roll out the dough. do. not. separate it on those perforated lines. you want to instead make it into 4 squares and totally press the perforated edge out. then prep any of the below combos:

organic-ish pizza calzones:
- mix equal parts organic pizza sauce and organic butternut squash puree. spread that goodness on the dough
- chop up natural selections pepperoni
- organic kale chopped up
- peppers if you like. pineapple if you like. any toppings that you like
- sprinkle the goodies on the dough
- top the goodies with your choice of [healthy] cheese. we use lactose/dairy/soy free faux cheese. it is amazing.

ham+cheese.
-this one is super simple. natural selections smoked ham. lactose/dairy/soy free faux cheese. i always sneak chopped kale in because, well, you'd be nuts not to sneak that into any meal. seriously. you'd be nuts.

chicken pot pie.
- chop up your boneless chicken breast. warm up some coconut oil in a skillet. bam. throw that poulet in.
- steam frozen mixed veg and then add them to your chicken skillet. also add in one small can of organic cream of chicken soup.
- you only need to simmer that combo for a few min.

shepherd's pie:
-brown a mini pack of organic lean ground turkey
-add corn. add any veg but i'd stick with corn + be classic like calvin klein on this one.
-add organic gravy. it exists. it's in the natural foods section.

truth times? you could throw almost any ingredients into this mix and be happy with the outcome.

so. once you hum and haw + decide which one to try, get it prepped, and then pop it onto your dough by the spoonful or two. don't overstuff. that's just messy. fold that dough over so the edges meet. use a fork to seal the little bad boys closed.

i like to use parchment paper on a baking sheet. it makes clean up even easier.

bake those badboys for 10-12 minutes.
10-12 minutes? are you kidding me. this is my go-to for that evening when i forgot to plan dinner/did a later hot yoga class/a meeting went late/i'd rather lay on the living room floor and race hot wheels or colour or paint or kick the ball around than spend a full hour making dins.

also? secret time? i totally hate that some nights, making dinner means i'm in the kitchen while marcus is doing his own thang. so these pillsbury [aka gluten. AH] dins? i am all over getting marcus up on a stool at the counter, and giving  him a little dough ball on a tray, and letting him make his own calzone. toddlers love that stuff. marcus? he totally loves to contribute. he loves to use his little man hands. he squeals with delight when i let him get up to elbows in sauce. mess. dough. without reserve.

so i'm all over these quickie meals. and that little dough boy too.
