every week i try at least one new recipe. i can't bake worth a dime so the least i can do is master enough healthy recipes to keep things exciting at the breakfast/lunch/dinner table. what i've learned so far, is that it isn't rocket science. the key is not to overthink it. sometimes i try these ridiculous fancy saucey sautee your sister and then some recipes and a]i don't even LIKE fancy food i actually prefer simple, healthy and delicious and b]it stresses me out and i bomb the recipe and we end up eating cuke sticks with tsaziki and cheese and organic crackers for dinner.
i also don't have a ton of time. i work like a mad woman until the minute i pick marcus up from school and don't want to spend an hour making dinner. i want to enjoy my evenings but also have as healthy a lifestyle as poss.
so i don't have any impressive recipes to share. but i do have some super easy, ultra healthy and fast dinner ideas that i can confidently say are marcus-approved. and whether your household is a la one parent like mine, or you have an awesome [or less than awesome but still] partner, i think we can all appreciate easy meals through the week.

this meal took me like, 17 minutes to make.
you need:
-chicken breast all thawed and ready to rock
-organic quinoa
-any assortment of vegetables
-coconut oil
-sea salt + seasoning of choice
-pc blue menu butter chicken sauce
-parchment paper
1. organic quinoa. get it going people. the directions are on the box i get no credit for this.
2. turn the oven on broil. high. we're going all out here.
3. start stir frying chicken in a teaspoon of coconut oil. [shout out to heartland gold coco oil.]
4. chop up any green vegetables you have in your refridgerated possession. i had kale [my current fave], asparagus and zucchini [ps. why don't you eat zucchini? what is not to love?]
5. cover a baking sheet in parchment paper just for fun.
6. get frozen carrots [or fresh if you want a gold star] and by now your quinoa is starting to boil. put a steamer on top of that goodness while it cooks and steam the carrots. don't you dare dirty another pot for nothing.
7. how's your chicken? check that poulet. i bet it's like, halfway done. on mid heat of course.
8. make sure that when you're steaming carrots on top of the quinoa, you are still being mindful of your quinoa. stir often.
9.. scatter your chopped vegetables on the baking sheet. drizzle melted coconut oil on top, toss it around.then shake some sea salt and your choice of seasoning on top.
10.. once your chicken is cooked through but not yet golden, pour in pc blue menu butter chicken sauce [GASP. SHE DIDN'T MAKE THE SAUCE FROM SCRATCH? are you people out of your minds? i said 17 minutes.] and let that simmer on low heat.
11. i bet your quinoa is ready to come off the burner and your carrots are perfectly tender.
12. put the baking sheet in the oven. PAY ATTENTION. they will broil fast.
13. take the chicken off the stove to cool.
14. the baked vegetables will only take like 4 minutes.
you're done. i know what you're thinking. did that just happen? was it faster than your first time all over again? i know people. i know. and it's healthy. and colourful. and stupid tasty.
pour the butter chicken on top of the quinoa, make your vegetables look all fabulous and eat your face off. and then, you just took like an hour back in your standard-dinner-making day and can use that to build a fort, read a book in your nook, or go for an early evening bike ride.
